Recipe of Korean Dakgalbi with Noodles & Pandan Rice

Cook a delicious Korean Dakgalbi with Vit's Noodles, pandan rice, tteokbokki and mozzarella. An easy one-pan recipe for family meals.

Ingredients

  • 2 packs Vit’s Economy Pack Noodles
  • 300g Embrio Pandan Rice
  • 300g boneless chicken, bite-sized
  • 8 pieces tteokbokki
  • 1 yellow onion, sliced
  • 2 garlic cloves, sliced
  • 2 cloves garlic, minced
  • 2 cups cabbage, chopped
  • 1 carrot, sliced
  • 1 spring onion, chopped (for garnish)
  • 1 sheet roasted seaweed, torn
  • Mozzarella cheese
  • 2 tbsp sugar
  • 2 tbsp Korean chilli powder
  • 3 tbsp light soy sauce
  • 3 tbsp gochujang
  • 2 cloves of minced garlic

Method

  • Cook the Vit’s Economy Pack Noodles and Embrio Pandan Rice according to the package instructions. Drain and set aside.
  • In a large bowl, combine the chicken, tteokbokki, onion, sliced garlic, cabbage, carrot and roasted seaweed. Add all the marinade ingredients and mix well. Let it marinate for 10 minutes.
  • Heat a large pan over medium heat and stir-fry the marinated mixture until the chicken is fully cooked and the tteokbokki is tender.
  • Divide the cooked mixture into two portions. Toss one portion with the cooked noodles and the other with the cooked pandan rice.
  • Sprinkle mozzarella cheese over both portions. Cover the pan for 1–2 minutes, or until the cheese has melted.
  • Arrange both the cheesy noodles and rice on a serving platter. Garnish with chopped spring onions and serve immediately.
