
Recipe of Chilli Crab Udon
Craving something spicy, savoury and packed with crab? This Chilli Crab Udon brings together chewy udon noodles and tender crab meat in a rich, flavour-packed sauce made with chilli, garlic, ginger, tomato and soy sauce.
It’s an easy noodle recipe that feels a little more special than your usual bowl of noodles, but is still simple enough to make at home. Finish it with fresh chives and a drizzle of chilli oil for an extra kick.

Ingredients
- 1 packet Vit’s Udon
- 1 red chilli, finely diced
- 4 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 shallots, finely diced
- 1 tbsp tomato paste
- 1 tbsp ketchup
- 1 tbsp light soy sauce
- 300g crab meat
- 1 chicken stock cube
- 400ml water
- ½ tbsp cornstarch
- 1 tbsp water
- 10g chives, finely sliced
- Chilli oil, for garnish (optional)
- Oil, for cooking
Method
- Heat a little oil in a pan over medium heat. Add the diced chilli, garlic, ginger and shallots. Sauté until softened and fragrant.
- Add the tomato paste, ketchup and light soy sauce. Stir well and cook for about 2 minutes.
- Add the crab meat and gently break it up as it cooks. Pour in the chicken stock and bring to a simmer. Cook for 5 minutes.
- Mix the cornstarch with 1 tbsp water to make a slurry. Stir it into the crab sauce and cook until the sauce thickens.
- Cook the Vit’s Udon according to the packet instructions. Drain well.
- Add the cooked udon to the chilli crab sauce and toss until the noodles are well coated. Garnish with sliced chives and chilli oil, if desired.
Optional: Set aside some of the chilli crab gravy and serve it as a dip with warm, fluffy mantou. It’s a great way to enjoy every last bit of the sauce.
