Recipe of Malaysian Soto Ayam Noodle Soup Recipe

Fragrant, comforting and full of depth, Malaysian Soto Ayam is a beloved noodle soup known for its aromatic spice blend and soothing herbal broth. This version pairs the rich, flavourful chicken soup with the light and springy texture of Vit’s Slim Instant Noodles. Each bowl is layered with tender shredded chicken, warm spices and fresh herbs, finished with a squeeze of lime for a bright, refreshing touch. It is hearty yet balanced, making it perfect for lunch, dinner or whenever you crave a bowl of true Malaysian comfort.

Ingredients

  • 2 to 3 pieces chicken, boiled and shredded
  • 1 stalk lemongrass, bruised
  • 1 cinnamon stick
  • 2 star anise
  • 3 to 4 cardamom pods
  • 1 litre of water or chicken stock from boiled chicken
  • Salt and seasoning to taste
  • 4 shallots
  • 3 cloves garlic
  • 1 inch ginger
  • 1 inch fresh galangal
  • 1 tablespoon ground coriander
  • 1 to 2 packs Vit’s Slim Instant Noodles
  • Chopped spring onions and cilantro
  • Fried shallots
  • Lime wedges
  • Sweet soy sauce with chilli, optional

Method

  1. Heat a little oil in a pot and sauté the blended ingredients until fragrant and the oil begins to separate.
  2. Add the lemongrass, cinnamon stick, star anise and cardamom pods. Sauté briefly until aromatic to release the full flavour of the spices.
  3. Pour in the water or chicken stock and bring to a boil. Let it simmer for 15 to 20 minutes to develop a rich and aromatic broth. Season with salt and seasoning to taste.
  4. Boil the chicken until fully cooked. Remove, shred finely and set aside.
  5. Blanch Vit’s Slim Instant Noodles in 400ml of water for about 2 minutes. Drain well and place into serving bowls.
  6. Ladle the hot Soto broth over the noodles. Top with shredded chicken, chopped spring onions, cilantro and fried shallots. Add a squeeze of lime and a drizzle of sweet soy sauce with chili if desired.
