
Recipe of Chili Pan Mee using Pan Mee Instant
Ban Mian and pan mee are Hakka origins. A variation on the conventional Chinese Ban Mian served with soup is KL chilli pan mee. The flat noodles are covered with ground beef, poached eggs, and crispy anchovies after being tossed in a spicy umami sauce that is made with a tonne of dried chilli, garlic, dried prawns, and herbs. This is the dish for people who loves spicy food.

Ingredients
- Vit’s Instant Pan Mee
- Chili Oil
- Anchovies
- Pak choy or mustard
- Garlic
- Dried chili
- Dried shrimp
- Chicken Meat
- Egg
Method
- Heat the water:
- Put a large pot of water on to boil.
- Cook the instant noodle:
- Once the water has reached a rolling boil, add the Pan Mee instant noodle, and cook, uncovered, at a rolling boil.
- Toss the noodle.
- Separately soak the dried mushrooms, dry prawns and dried chiles in warm water until they are all soft.
- Put the chili, dried shrimp, and garlic in a food processor and chop it finely.
- Heating up a pan, add oil. Transfer the chilli mixture to the pan and stir-fry for 20 to 30 minutes, or until the mixture is dry and the colour is black but not burnt, over medium heat. Turn off the heat and leave the pot alone.
- The anchovies should be fried until crisp in hot, preheated oil. Anchovies should be taken out and placed on absorbent paper towels. To fry the meat topping, keep the oil warm. Reheat the oil over medium heat until it is hot. The chicken meat should be stir-fried.
- When the meat is fully cooked and the liquid has reduced, add the mushrooms, and boil the dish gently for a while. seasonings to suit your taste
- You can use Pak Choy. Water should be heated up in a pot. Pak Choy should be added and blanched for two to three minutes, or until they are tender but still have a vibrant green colour. To stop cooking, remove from water and rinse with cold water. Move aside.
- Noodles are portioned into a serving bowl. Add the chilli paste, some of the oil, the sauce from the chicken meat and mushroom topping, some Pak Choy, the poached eggs, and the crispy anchovies. Now you are done! Enjoy!
