Recipe of Cantonese Fried Udon | Kung Fu Style

A comforting Cantonese-style udon dish featuring smoky pan-fried noodles topped with silky egg gravy, fresh vegetables, tender seafood, and fishcakes. This halal-friendly Kung Fu–style noodle is rich, savoury, and perfect for a satisfying homemade meal.

Ingredients

  • Vit’s Udon noodles
  • Carrot (sliced)
  • Seafood (prawns, squid, or mixed seafood)
  • Varieties of fishcake / fishballs
  • Choy sum
  • Garlic (minced)
  • Dark soy sauce
  • Light soy sauce
  • Cornstarch
  • Egg
  • Cooking oil
  • Water or stock
  • Salt or seasoning to taste

Method

  1. Blanch udon noodles for about 1 minute to loosen them. Drain and set aside.
  2. Heat oil in a wok. Add udon noodles and stir-fry. Add dark soy sauce and light soy sauce, tossing until noodles are evenly coated. Remove and set aside.
  3. In the same wok, stir-fry garlic until fragrant. Add seafood and fishcakes. When prawns start to turn pink, add water or stock.
  4. Add carrot and choy sum. Let it simmer briefly until vegetables are tender.
  5. Mix cornstarch with water, then pour into the wok to thicken the sauce.
  6. Crack in an egg and give it a quick stir.
  7. Season with salt or preferred seasoning to taste.
  8. Pour the thick sauce over the prepared noodles. Serve hot and enjoy!
